This Mixed Vegetables Uttapam’s recipe is so similar to plain dosa, masala dosa or other dosa recipe but with toppings we do in pizzas. It’s a thicker kind of dosa, that has toppings of well sliced vegetables such as tomato, onion, carrom & capsicum.

The mixed vegetable uttapam is one which I make using any leftover veggies. Although I try to include well sliced onions every time & It seems that onions is a must in every uttapam recipe. I even make it with both left over idli batter & dosa batter.

Ingredients (250 ML=1 cup):
For batter:
  • dosa rice/rice sona masuri-3 cups
  • urad dal-1 cup 
  • fenugreek seeds/methi-½ tsp 
  • thin poha/beaten rice/avalakki-1 cup 
  • salt as needed
  • water to soak
For toppings:
  • Properly sliced onion-1 medium size
  • Properly sliced tomato-1 medium size
  • Well sliced capsicum-½ 
  • Grated carrot-1 
  • few roughly sliced curry leaves 
  • Well sliced coriander leaves-3 tbsp 
  • Well sliced green chili-1 
  • salt as needed
Preparation for Mixed Vegetables Uttapam:
  • Initially, in a big bowl, soak three rice cups & methi seeds for at least five hrs.
  • Then, soak the urad dal for three hrs.
  • Put the soaked dal in blender & blend to fluffy & soft batter.
  • Place it into a big bowl & put it beside.
  • Next, blend the soaked rice with poha including water if needed.
  • Put it into the vessel of urad dal batter.
  • Combine properly assuring the batter has mixed completely.
  • Then clean its sides using your hand.
  • Close & ferment in a warm place for eight to twelve hrs.
  • Then drop salt into the batter & mix properly.
  • Next, heat griddle & drop a ladleful of batter on it & spread in a thick circular way.
  • Now drop the ready vegetable mix on the dosa’s surface.
  • Pour oil, if you want.
  • Then, close it with a lid & cook with moderate flame.
  • Allow it to fry till the base of dosa converts into brownish gold.
  • Now, have veg uttapam instantly along with sambar & coconut chutney.
