Making of Pav Bhaji:

1. Start blanching the peas, cauliflower, carrots, and beans. You can also boil them with water in the pressure cooker. Then remove them in a bowl and mash them coarsely.

2. Now heat butter or oil in a pan and saute onions till they turn light golden. Then add chopped green chilies and ginger-garlic paste. Saute for a minute and then add chopped capsicum and saute them until they become soft. Add the pav bhaji masala and mix all the things well.

3. Now, add the chopped tomatoes and salt and mix well. Let the tomatoes get cooked for about three to four minutes. Once the oil starts separating, add coarsely mashed peas, cauliflower, carrots, beans, potatoes and 2 cups of water.

4. Bring the water to a boil and let the bhaji simmer for 10-15 minutes. As soon as all the vegetables are mashed and blended together, switch off the gas. Garnish the bhaji with finely chopped coriander leaves and butter. You can also garnish with spring onions. Add a few drops of lemon before serving. Enjoy the delicious bhaji with Pav.
