  • mutton-500 gm
  • asafoetida-1 pinch
  • cinnamon-2
  • black cardamom-3
  • powder fennel seeds-3 teaspoon
  • coriander powder-1 tablespoon
  • saffron-1 pinch
  • grated khoya-1/4 cup
  • kewra-2 ml
  • red chilli powder-1 teaspoon
  • mustard oil-1/4 cup
  • cumin seeds-1 teaspoon
  • peppercorns-6
  • red chilli-3
  • ginger powder-1 teaspoon
  • hung curd-3/4 cup
  • garam masala -1/4 teaspoon
  • blanched and peeled, crushed as paste almonds-15 gm
  • salt-4 pinches
  • water-1 cup

For Garnishing the Rogan Josh:
 
  • coriander leaves-2 sprigs
  • red chilli-2

Mutton Rogan Josh Procedure:
 
  • In a big bottom vessel, heat oil of mustard with moderate flame.
  • Involve cinnamon, heeng (asafoetida), cardamoms, cloves, cumin seeds, peppercorns & red chillies.
  • Sauté all masalas in the vessel with low flame. Then, include mutton pieces & cook with moderate flame for like ten mins. Then add slight water & cook covered.
  • Once the pieces are gentle & cooked half, drop the ground spices with saffron & mix properly. Cook it for two-three mins.
  • Next, drop salt with whisked yogurt & cook for around three mins. Now include the almond paste, garam masala, kewra water & grated khoya..
  • Cook mutton with low flame until it is tendered.
  • Decorate it with raw coriander leaves & red chillies. Have it with rice or naan.
